I love pasta but it’s obviously not great for someone like me who is trying to lose weight. Zoodles (aka Zucchini Noodles) are a great alternative. Pretty much anything you could make with pasta you can make with zoodles instead!
Below is my go-to quick & easy zoodles recipe!
The first step is to turn the zucchini into zoodles! Simply attach the zucchini to the spiralizer and turn the handle! I got this spiral vegetable slicer over Christmas and would recommend it if you’re looking to get one! It comes with several different blades so you can get different types of cuts depending on what you want to make.
Once your zoodles are made it’s time to cook some shrimp. I put them in a pan with olive oil and cook for a few minutes on each side.
After the shrimp are cooked add in your zoodles and flavor to your liking with lemon juice and a bit more olive oil.
When your zoodles have softened it’s done! As a finishing touch I like to add in some crushed red pepper and garlic.
